- 180g white chocolate, chopped
- 1 cup thickened cream
- 1 teaspoon coconut essence
- 3 eggs, separated
- Microwave chocolate and cream in bowl for 1-2 minutes, Stirring halfway. Stir in essence and let cool for 5 minutes
- Stir in egg yolks until just combined into chocolate mixture
- Beat egg whites with electric blender until stiff peaks form
- Fold egg whites into chocolate mixture
- Spoon mixture into Square Mini cups and refrigerate for 3 hours
- Top with any fruit or sprinkle topping you like
